Vegan Indonesian cooking workshop
Vegan Indonesian workshop in Amsterdam. Recently a team of Uber Eats asked me if I could organise a vegan indonesian cooking workshop for them. I’d never thought about doing this, but when I started to study I found out that actually it wasn’t that difficult to replace eggs and meat by plant based products. The group loved preparing the menu and totally adored the food, so here it is: the vegan Indonesian workshop!
The menu
sweet/spicy corn patties
*
tempeh ketjap
Originally this dish is called babi ketjap, and is made with pork. After some experimenting I found out that fried tempeh gave just the right texture. Tempeh served in sweet soy sauce, fresh lemon grass, fresh galangal/laos, ground koriander seeds and some cumin.
atjar ketimoen, sweet and sour cucumber pickle
gado gado, traditional refreshing salad of blanched vegetables with a peanut dressing
sajoer loddeh, vegetables with coconut, fresh lemon grass and freshly ground koriander seeds
sambal tofu
Sambal tofu is made with eggs and is called sambal telor. The tofu is frozen, defrosted and when all the moisture is squeezed out you have a light spongy texture that absorbs the lovely sauce. Thick coconut sauce with curcuma, galangal, onion and sambal.
*
banana ice cream with a hint of honey served with a crispy lemon brittle
*
hazelnut cookies with cinnamon to be served with coffee

About the vegan Indonesian cooking workshop
The cooking workshop starts with a drink in the dining room. As soon as the group is complete I’ll invite you to the kitchen. During a short introduction about the menu I will let you taste and smell some of the ingredients.
Everybody starts with the preparation of all the dishes and the first course will be served while cooking. Then the second course will be served in the dining room. The same for main and dessert. We end with coffee, tea and cookies. As a group you make all the dishes yourself but we take care that you don’t have to spend too much time in the kitchen.
