Vegan Indonesian workshop in Amsterdam. Recently a team of Uber Eats asked me if I could organise a vegan indonesian cooking workshop for them. I’d never thought about doing this but when I started to study I found out that actually it wasn’t that difficult to replace eggs and meat by products that are vegan. The group loved preparing the menu and totally adored the food, so here it is: the vegan Indonesian workshop!
sweet/spicy corn patties
Originally this dish is called babi ketjap, and is made with pork. After some experimenting I found out that fried tempeh gave just the right texture. Tempeh served in sweet soy sauce, fresh lemon grass, fresh galangal/laos, ground koriander seeds and some cumin.

Sambal tofu is made with eggs and is called sambal telor. The tofu is frozen, defrosted and when all the moisture is squeezed out you have a light spongy texture that absorbs the lovely sauce. Thick coconut sauce with curcuma, galangal, onion and sambal.

Indonesians don’t have a habit of baking, so here is a more western style dessert. Bitter belgian chocolate, silken tofu, ripe banana, a little bit of sugar, some honey and chopped toasted hazelnuts. The silken tofu gives no taste but provides texture and airiness, the banana and honey give sweetness as well as a pleasant acidity. The chopped hazelnuts bind all the flavours together and add texture.

Price per person € 79,— includes BTW/VAT, half a bottle of wine, the workshop, dinner, unlimited softdrinks, juice, water and coffee and tea.
The price of the vegan Indonesian cooking workshop is € 82,— p.p. excl. BTW/VAT for the workshop, 4-course dinner and all drinks. You don’t have to share the studio with other guests.
This cooking workshop can be booked for groups starting from 14 persons or a minimum amount of € 1148,— excl. BTW/VAT.
The kookstudio can be booked for groups up to 36 guests.
The workshops take between 3 to 4 hours and can start at any time.
